Thanksgiving usually means lots of food. The usual roasted turkey and of course an array of delicious desserts. For my Thanksgiving I usually make this really great tasting pumpkin roll cake that has a very delish filling of cream cheese.

This pumpkin roll cake actually takes a bit of time in its preparation but it will really be all worth it. For sure, after you serve this up to friends and family that you’ll receive compliments all the time and if you’ve still got some left over cake left, you can always keep them inside airtight containers and enjoy them later.

So here is the recipe and I hope that you’ll like it.

Pumpkin Roll Cake With Cream Cheese Filling

Recipe Ingredients

Wax paper (to line baking pan)

For cake base:
3/4 c flour (all-purpose)
1/4 c sugar (powdered)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon; ground
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp salt
3 eggs
1 c sugar
1 c pumpkin (fresh or canned)
1 c finely chopped nuts (optional), (such as pecans or walnuts)

For the filling:
8 ounces cream cheese (room temp)
1 c sugar (powdered)
6 tablespoons butter (room temp)
1 tsp vanilla

You’ll need a 10-inch by 15-inch baking pan and the ingredients listed at the right.

Preheat your oven to 375 degrees F (190 degrees).

Prepare the cake:

Line the baking pan using wax paper, then grease and flour the paper. Into a small bowl, mix cinnamon, baking powder, baking soda, flour, nutmeg, ginger, cloves & salt together. Into a big bowl of an electric mixer at medium speed, beat together your eggs and sugar. Add pumpkin and beat until well blended. Reduce speed and stir in spiced flour mix.

Spread pumpkin spice batter on your baking pan evenly. Sprinkle nuts (optional). Bake 10 to 15 minutes, test by pressing finger into cake to check for firm, but moist, texture. Sprinkle powdered sugar onto a thin cotton kitchen towel (helps prevent cake from sticking to the towel). Remove cake from oven and turn onto the powdered towel, leaving the wax paper attached to your cake.

Slowly peel off the wax paper and roll up cake and towel together and allow cooling on a rack.

Prepare the filling:

In a medium mixing bowl, beat cream cheese, powdered sugar, butter & vanilla together. Mixture should be smooth. Slowly unroll your cake, spread the filling mixture on your cake. Roll up cake then wrap tightly in plastic wrap. Refrigerate at least 1 hour prior to serving. Sprinkle with powdered sugar then serve.

Today, whatever origin and history, Thanksgiving becomes a feast day that is really set for celebrating in most parts of Northern America for people to express thankfulness and gratitude to our God for blessings received.

In America, it’s always celebrated every 4th Thursday of November and in Canada, since their harvesting season normally ends earlier, it’s celebrated every 2nd Monday of October. Canada does a 3-day celebration but it isn’t as hyped as it’s done in the US.

Although cooking electrically is less risky when doing overnight cooking, it really is more expensive. Since you’ll be doing the cooking for the whole day, then temperatures will rise a bit in your kitchen. Using your electric roaster is actually one great way of cooking your turkey. It is not as expensive as using those gas ranges and it’s safer compared to those gas ovens. Also it creates lesser heat compared to the gas & electrically operated oven.

Instructions:

Preheat the oven at 400 degrees F. Prepare a 10 inch (springform) pan.

Adjust to high-heat then allow to boil. Adjust to low-heat then simmer the mixture w/o cover for twenty-five minutes.

Garnish w/ chopped cilantro or onions prior to serving.

Ingredients:

1 pc of whole turkey (reserve giblets and neck, about 12 lbs)
1/3 c of maple syrup (pure)
2 Tbsps of thyme (fresh); chopped
2 Tbsps of marjoram (fresh); chopped
1/2 tsp of lemon rinds
3/4 c of softened butter
2 c of onion; chopped
1-1/2 c of celery; chopped
1-1/2 c of carrots; chopped
2 c of apple cider

For the gravy:
1/3 c of flour
Chicken broth
Chopped thyme
Chopped bay leaf

Instructions:

Boil the (apple) cider with the (maple) syrup inside a heavy saucepan above moderately high heat till the mixture has reduced into half cup, or about twenty mins.

Take out from the heat. Add in lemon rinds, and half the marjoram & the thyme; mix well. Add the butter; whisk thoroughly till melted then season pepper and salt.

Place inside the refrigerator, covered, till cold or about two hours.

Heat the oven at 375 degrees F. Rinse the turkey and pat dry using a paper towel. Place the turkey onto a (roasting) pan. Rub the butter mixture under the skin and above the breast part.

If the turkey is stuffed, spoon the mixture inside the cavity and rub (1/4 cup) above the skin, save the rest of the mixture to be used on the gravy.

Loosely tie together the legs then arrange carrots, celery, onion, giblets, and neck on the pan surrounding the turkey. Sprinkle the rest of the thyme & marjoram over the vegetables and pour in (2 cups) cider.

Roast the turkey for half an hour then reduce the temperature of the oven, 350 degrees F. Cover the turkey using an (aluminum) foil.

Afterward, then continue to roast till the meat inside the thigh reaches 180 degrees F, while basting frequently with its juice. (2hrs & 55mins for stuffed , 2hrs & 25mins for unstuffed).

Take the turkey out from the oven and place it on a platter then tent it with an (aluminum) foil. Let it stand for half an hour.

To make the gravy, get the juice from the turkey and strain into a large cup. Press the solids to squeeze out all of the juice then scoop the fat from the pan juice.

Add just enough of the (chicken) broth onto the juice, making 3 cups. Transfer the liquid onto a medium-sized saucepan; let it boil. Combine (3 tablespoons) butter mixture and flour; add onto the saucepan.

Add the spices and continue boiling until it becomes thick, stir constantly. Add (apple) brandy only if preferred and season pepper and salt. Serve turkey along with the gravy.

Instructions:

Combine sugar, cornstarch, and cinnamon inside a saucepan; mix well then add the amaretto and the peach jam. Stir thoroughly and add peaches. Stir them gently, allowing the peaches to be coated well.

Cook above moderate heat, while stirring occasionally, till the mixture becomes bubbly and thick. Scoop the mixture onto an 11×7 inch casserole dish that is slightly greased.

Place the dough in between two plastic sheets and roll it to 10×17 inch rectangle. Take off the top plastic sheet and dust over (1-1/2 teaspoons) flour and rub gently.

Do the same on the other side. Place inside the freezer for fifteen mins.

Cut six strips (10×1/2 inch) using the (pastry) wheel and cut eight strips (6×1/2 inch); arrange them making a criss-crossing design above the peach mix. Combine cinnamon and sugar; dust over the top dough.

Place inside the oven and bake for half an hour or more (350 degrees F) till slightly brown. Allow to cool for fifteen mins on the rack. Scoop onto bowls then top it with a scoop of ice cream.

Ingredients:

1 large onion (white)
1/4 c seasoning mix (Creole)
1 turkey; giblets and neck removed
3 gal of oil (peanut oil)

Instructions:

Clean turkey. Season with Creole mix. Rub on all sides of your turkey.

Prepare deep fryer. Boil up the peanut oil (350 degrees F). Slowly dunk in turkey neck side first into your deep fryer. Cook this for about forty five minutes.

Turkey is cooked all the way through once core temperature is reached (180 degrees F).

Ingredients:

1/2 c of sour cream (dairy)
1/4 c of milk
1/4 c of mayonnaise
1 tsp of garlic; minced

Cayenne pepper

Instructions:

Ingredients:

1 Tbsp of olive oil (virgin or extra virgin)
1 pc of onion (medium); chopped finely
1 pc of bell pepper (medium, red, green or yellow); seeded then chopped finely
4 cloves of garlic (medium)
1 pc of pepper (jalapeno)
16 oz of tomato sauce (unsweetened, canned)
16 oz of beans (black, canned)
16 oz corn (canned)
2 tsp of chili powder
1/2 tsp of sea salt (fine)
2 tsp of cumin (ground)
3 c of water (at room temperature)
1 c of cornmeal (yellow, stone-ground)
1 Tbsp of juice (freshly squeezed lemon)
1 tsp of mustard (Dijon)
1/2 tsp of sea salt (fine)
Cheese (Mozzarella); shredded
1/2 tsp of cayenne pepper

Instructions:

Heat oil on a pan above moderately high heat. Once heated, add garlic, onion, and pepper. Cook till softened for 6 to 8 mins.

Turn off heat, mix in (tomato) sauce, corn, beans, salt, cayenne, chili, and cumin. Stir thoroughly then mash, making it thicker.

Pour onto an 8×8 inch baking glass dish and sprinkle the Mozzarella above corn mix. Preheat oven at (350 degrees F).

Boil the water then add salt, lemon, cornmeal, and mustard inside a saucepan; stir thoroughly till mixed.

Continue to boil above moderately high heat. Once boiling, reduce heat into low, allowing to simmer while stirring frequently till thick or 3-5 mins.

Spread (cooked) cornmeal above bean mix. Bake inside oven for half an hour and let it cool at about ten mins. Serve at once.

Ingredients:

3 Tbsps of flour
1 pc of carrot; cut into chunks

1/2 c of port (Tawny)
1.5 c of chicken stock
1/2 stick of butter; softened
1 whole turkey (14 lbs); neck and giblets reserved
1 pc of apple; pared, cored & chopped

Instructions:

Clean turkey. Rub your turkey w/ butter on all sides including inside the skins pockes. Season with pepper and salt. Cover with cheese cloth.

Set on a baking tray and pop in the oven for one hour. Using a separate pan, heat chicken broth and port together ’till it is boiling. Add butter.

After one hour, include the apples and veggies in the roasting dish. Coat turkey using chicken broth mixture. Baste wih pan drippings as well.

Continue to cook turkey for two more hours. When your turkey is cooked, transfer it to serving platter. Heat roasting dish over low fire. Add flour to thicken sauce. Boil it until the sauce is thick.

Instructions:

When the vegetables become tender or limp, add tart apple, raisins, Worcestershire, curry, basil, and nuts. Toss them together and let it stand to let the flavors blend or wait till the rice has cooked.

2 c of cranberries (fresh); halved

For the Sauce:
1-1/2 c of sugar (granulated)

Instructions:

Beat the sugar, sour cream, plus eggs in a mixing bowl. Save (2 tablespoons) of flour then combine the rest of the flour, Calumet, and soda. Add it to the mixture then add the vanilla. Mix thoroughly.

Dust the saved flour above the cranberries then mix them onto batter using a spoon. Transfer batter onto a 9×13-inch pan, buttered and slightly floured. Place inside the oven and bake for half an hour at 350 degrees F.

To make the sauce topping, combine cream, butter, and (granulated) sugar inside a saucepan above moderate heat. Let it boil for two mins while stirring frequently.

8 c of oysters; rinsed then drained
1/2 c of butter (unsalted)
3 pcs of scallions (whole); minced

Instructions:

Preheat broiler. Spray a 9×13 inch baking dish with a nonstick cooking spray.

Melt (2 tablespoons) butter inside a large casserole then add scallions along with bell pepper then saute till tender or about five mins. Add oysters then mushrooms; saute at about five more mins.

Melt (2 tablespoons) butter on a pan, add flour and cream; stir thoroughly till it becomes thick and boiling, Add cheese then stir well.

Instructions:

Preheat the oven at 325 degrees F. Prepare a 9-inch (springform) pan.

Mix cinnamon with the crackers in a bowl. Add the butter; mix thoroughly. Transfer onto the pan and press firmly on the base and the pan sides. Bake at about six mins till set. Set crust aside.

3 tbsps of flour (all-purpose)
1 tsp of lemon rind (fresh); grated finely
1/2 tsp of cinnamon (ground)

2/3 c & 1 Tbsp of sugar (white)
1/8 tsp of salt
1 Tbsp of lemon juice (fresh)
1 pc of egg (large); beaten lightly
Pastry doug
2-1/2 lbs of apples; cored, peeled then cut to wedges

Instructions:

Preheat the oven at 425 degrees F. Place the cooking sheet inside (rack is in the middle).

To make the filling, combine salt, flour, cinamon, zest, allspice, (2/3 cup) sugar; whisk thoroughly. Add (lemon) juice and apples; toss gently.

Roll a piece of the dough above a floured board and flatten to a 13 inch round. Fit it to a 9 inch pie dish, trim its edges but leave half an inch overhang. Place inside the refrigerator.

Roll the rest of the dough above a floured board and flatten to an 11 inch round.

Scoop the filling onto the crust; cover it with the 11 inch round; trim using (kitchen) shears but leave half an inch overhang. Seal the edges by pressing gently and crimp attractively.

Gently brush the top with an egg then sprinkle the rest of the sugar then poke holes on top using a fork.

Bake on the hot sheet for twenty mins then reduce the heat to 375 degrees F. Continue baking till the crust turns golden, or about forty more mins. Allow to cool for 2-4 hours.

1 pie shell or crust (flaky)
ice cream (vanilla)

For the Streusel:
1/2 c of sugar (golden brown)
2/3 c of walnuts
1/4 c of cornmeal (yellow)
1/4 c of flour (all purpose)
3/4 tsp of cinnamon (ground)
1/2 tsp of nutmeg (ground)
5 Tbsps of butter (unsalted, chilled); cut to bits

For the Filling:
4 1/2 c of apples (Granny Smith); peeled, cored, quartered, cut to wedges
1/4 c of sugar (white)
1/2 c of sour cream
2 Tbsps of flour (all purpose)
1.5 tsps of cinnamon (ground)
3/4 tsp of nutmeg (ground)
1/4 tsp of cloves (ground)

Instructions:

To make the streusel, place nuts, flour, cornmeal, nutmeg, sugar, and cinnamon in the food processor. Process till chopped finely then add the butter; process till it resembles soft lumps.

To make the filling, preheat the oven at 375 degrees F. Toss the apples together with the sour cream inside a bowl.

Combine nutmeg, flour, cloves, and cinnamon; sprinkle over the apples. Toss well for the apples to be coated well.

Transfer the filling onto the crust then sprinkle the streusel above the apples, making it completely covered.

To make the (pecan) syrup, combine sugar, syrup, eggs, butter, vanilla, salt, cinnamon, and pecan inside a bowl. Blend well and set it on the side.

Preheat oven at 325 degrees F. Butter an 8 inch springform (cake) pan; set it on the side. Roll dough above a floured surface, make to a 3/16-inch. Dust flour on the top then fold to quarters.

Instructions:

Peel lemons. Save rind. Preset oven (325 degrees F). Clean turkey, chopping off the neck and removing giblets.

Carcass of turkey w/ 2 c of meat (cooked) remaining
3 c of onions (sweet); sliced thinly

Once boiled, adjust to low-heat. cover & simmer it for an hour (stir occasionally).

Remove & discard the carcass. Add in veggies, cover then simmer it for twenty to twenty-five minutes more.

Adjust to high-heat and boil quickly. Lower to mid-heat and then cook for 8-12 more minutes ’til veggies become tender.

Add in the reserved meat. Heat it for five to ten minutes more at low-heat.

Ingredients:

1-1/2 c of mixed fruits (pears, apples, apricots, peaches, prunes, and figs); dried
1/2 c of dates; pitted
1/2 tsp of cinnamon (ground)
1/2 tsp of allspice (ground)
1/4 tsp of nutmeg (freshly grated)
1/8 tsp of salt
1/2 c of cranberries (dried)
1/3 c of sugar (white)
1 Tbsp of cornstarch (dissolved in 2 Tbsps of water)
2 c of water
2 Tbsps of brandy
3/4 c of pecans; chopped coarsely
1 pc of egg yolk (large)
1 Tbsp of sugar
2 recipes of pastry dough
1/2 Tbsp of water

Instructions:

Combine dried fruits, salt, sugar, dates, and spice inside the processor; process until coarsely chopped. Transfer onto a large saucepan then add cranberries then water.

Cook over very low heat, do not let it boil; stir frequently till the fruit becomes tender and mixture is very thick.

Add the dissolved cornstarch; stir constantly. Add the brandy; stir thoroughly. Take out from the heat and let it cool.

Place inside an airtight container and place inside the refrigerator for a day. This can be stored to one week.

When needed, take the mincemeat out from the refrigerator (change into room temperature). Preheat the oven at 375 degrees F.

Get half of the dough (but keep the rest chilled) and roll above a floured board and flatten to 13 inch round.

Fit it to the 9 inch pie dish then trim the edges, leave a half inch overhang. Let it chill for half an hour, uncovered till it becomes firm.

Place the pecans in shallow (baking) pan and toast inside the oven (middle rack) for four mins or till its color becomes dark.

Add the pecans onto the mincemeat; stir thoroughly. Spoon onto the crust and spread evenly.

Roll the other half dough above floured board and flatten to 1/8-inch thick. Cover the filling then trim the edges, leave 3/4 inch overhang.

Fold the overhang underneath the edges of the base of crust. Seal by pressing the dough and crimp the edges decoratively.

Combine yolk with (1/2 tablespoon) water then gently brush on the crust. Sprinkle sugar then poke holes on top using a fork. Place inside the oven (middle rack).

Bake for half an hour or more until the crust turns golden. Let the pie cool. Serve warm.

6 lbs of turnips (fresh); peeled then sliced to 1/2 inch rounds
1/4 tsp of nutmeg (ground)
1/2 c of melted butter (unsalted)

Instructions:

Preheat the oven at 325 degrees F. Toss the turnips together with the butter on a 13×9x2 inch baking glass dish then sprinkle pepper and salt

Bake for an hour, with the pan covered in aluminum foil. Take out from the oven then mash turnips coarsely. Add nutmeg; stir thoroughly. Add pepper and salt if preferred.

Ingredients:

15 1/4 oz of kernel corn (whole, canned); drained
15 oz of creamed corn (canned)
1/2 c of softened margarine
1 c of sour cream (dairy)
8.5 ozs of cornbread mix (dry)

Instructions:

Preheat the oven at 350 degrees F. Slightly butter a casserole pan (or dish).

Combine (sour) cream, corn, creamed corn, cornbread mix, and margarine inside a bowl; blend them well then pour onto the pan. Bake inside the oven for forty-five mins.

Ingredients:

4 c of butter lettuce (or Boston)
4 c of peas (sugar snap); strings removed then blanched
3 Tbsps of shallots; minced
4 tsps of vinegar (sherry)
Salt
Black pepper (ground)
7 tsps of olive oil (extra-virgin)
1/2 c of basil (fresh); chopped roughly
3 Tbsps of parsley (Italian flat leaf); chopped

Instructions:

Rinse and drain lettuce then tear to bite sizes. Combine shallots, oil, pepper, vinegar, and salt; mix well then set it on the side.

Combine peas, parsley and basil; add the vinaigrette then toss well. To serve, place lettuce on the platter. Arrange them on the edges.

Place the tossed vegetables above the arranged lettuce. Serve at once.

Zucchini Slaw Recipe

Ingredients:

1 pc of julienned sweet pepper (red)
1 pc of onion (red); sliced thinly
1 pc of julienned celery stalk
2 tsps of salt
2 Tbsps of dill (fresh); chopped
2 Tbsps of parsley (fresh); chopped
1 pc of grated carrot (large); grated
6 pcs of zucchini (medium); grated

For the Dressing:
2 Tbsps of mustard (Dijon)
2 Tbsps of red wine vinegar
3/4 c of mayonnaise
1 Tbsp of honey (pure)
1 Tbsp of olive oil
1/4 tsp of pepper
1 tsp of horseradish

Instructions:

Combine salt and zucchini then toss them well. Transfer on a colander and leave it there for half an hour. Rinse with (cold) water then drain.

Place the zucchini inside a bowl; add sweet pepper, carrot, celery, and onion. Combine mustard, mayonnaise, oil, horseradish, pepper, honey, and vinegar; mix well then pour onto zucchini.

Toss them well. Add seasonings if desired.

Ingredients:

2/3 bottle of champagne (750 ml)
Salt
Pepper
2 pcs of apples; halved & cored
1/2 c of butter
1 turkey (whole); giblets and neck removed

Instructions:

Preset oven (350 degrees F). Clean turkey. Lift off skins and smear butter inside. Fill in turkey cavity with apples.

Season turky with pepper, powdered garlic, and salt. Place the turkey inside a bag designed for roasting. Pour the champagne basting the whole turkey. Seal the bag then place into a baking tray.

Bake for three hours. When core temperature reaches 180 Farenheit, take turkey out from the oven. Cool a little bit before serving.

Ingredients:

4 c of turkey; cooked and diced
3 celery stalks; chopped
1 c of water
2 c of cream-of-chicken soup (10 & 3/4 oz each can)
1/2 c of butter
1/4 c of onions; diced
1 pack of croutons
A can of cream-of-celery soup (10 & 3/4 oz)

Instructions:

In 9×13-inch bake pan, arrange turkey at the bottom part.

In saucepan, place butter, celery, and onions then saute. Add in water and croutons. Mix well. Spread mixture over turkey-meat.

In separate bowl, mix together soups w/ milk enough to achieve pouring consistency. Spread all over crouton-mixture. Bake at 350 degrees F for an hour.

Sausage, Apple, and Dried Cranberry Stuffing Recipe

Ingredients:

3-3/4 c of bread (whole wheat and white); cubed
1 c of onion; diced
2 c of bulk sausage
2.5 tsps of sage (dried)
3/4 c of celery; chopped
1.5 tsps of rosemary (dried)
1/2 tsp of thyme (dried)
3/4 c of cranberries (dried)
3/4 c of stock (turkey)
4 Tbsps of butter; melted
1 pc of chicken liver (cooked); diced
1/3 c of parsley; chopped
1 pc of apple (Golden Delicious, medium); cored, peeled, then chopped

Instructions:

Preheat the oven at 350 degrees F. Bake inside the oven the cubed bread till golden-brown. Transfer bread onto a bowl; set on the side to cool.

Cook onions and sausage inside a skillet above medium-high heat; stir continuously, to break up lumps that will form, till cooked.

Stir in the celery, rosemary, thyme, and sage; cook at about two mins while constantly stirring.

Combine sausage mix, bread, apples, parsley, liver, and cranberries; toss them well. Sprinkle (melted) butter and stock onto mixture and toss them well.

Maple Roast Turkey and Gravy Recipe

Ingredients:

2 Tbsps of brandy
1 Laurel leaf
1 tsp of thyme (fresh); minced
3 tsps of flour
2 c chicken broth
1 c of carrots; cut into chunks
1 c of celerey; diced
2 c of onion; diced
1 whole turkey (14 lbs); reserve neck and giblets
Salt
Pepper
3/4 c of butter
2 1/2 tsps of lemon rind
2 Tbsps of thyme (fresh); minced
2 Tbsps of marjoram (fresh); minced
1/3 c maple syrup
2 c of cider (apple)

Instructions:

Mix the cider with the maple syrup. Bring this to boil. Season it with pepper and salt. Take out from heat then add your herbs and lemon rind.

Add your butter then blend until it is melted. Place inside a container and set it aside.

Preset oven (350 degrees F). Clean turkey then set on a baking tray. Lift off skin and rub the cider maple syrup inside the skins of your turkey.

Afterwards, rub the cider mixture on all sides of your turkey. Pop inside the oven for thirty minutes. Cover your turkey using alum foil and return inside the oven and cook for three hours more.

When turkey is baked, transfer this onto a serving platter. Strain the left over pan drippings. Return this to your baking tray. Add chicken broth. Cook on low heat.

Add flour in order to thicken mixture. Combine the remainder of your cider mix. Place herbs. Season using pepper and salt. Put one laurel leaf. Cook ’till it is thick.

Ingredients:

24 oz of broccoli florets (fresh)
2 pcs of garlic cloves; chopped finely
3 Tbsps of lemon juice (freshly squeezed)
3 Tbsps of olive oil
Salt

Instructions:

Steam the broccoli until tender (but firm) at about 4 to 6 mins. Heat oil on a non-stick skillet above moderate heat then add garlic.

Saute for a minute and add broccoli and (lemon) juice. Add salt if preferred. Cook for a while.

Roast Turkey With Herbal Rub Recipe

Ingredients:

1 pc of a whole turkey (fresh or frozen then thawed, 13 lbs)
1 pc of onion; cut into four
1/4 c of vegetable oil (or canola oil)
1 pc of lemon; cut into four
1 tsp of thyme (dried)
1 tsp of tarragon (dried)
1 Tbsp of rosemary (dried)
1/2 tsp of black pepper (freshly ground)
1 tsp of salt

Instructions:

Preheat the oven at (325 degrees F). Remove neck along with the giblets from the turkey; save them for a broth.

Wash the turkey using cool water then dry using a paper towel. Place the lemon and onion inside the cavity.

Combine pepper, salt, herbs, and oil inside a bowl then mix well and rub it under the turkey skin and so with the outer skin and cavity.

Secure (neck) skin with the skewers then fold the wings beneath the back-part and place the legs into a tucked-position.

Place the turkey, the side of breast facing up, onto a (roasting) pan. Loosely tent the turkey using foil then roast it for two and a half hours.

Take out the foil; use the juice for basting the turkey. Continue roasting for one more hour till the meat temperature inside its thigh reaches (180 degrees F).

Take out from the oven; let it rest at about 15 to 20 mins before slicing. Transfer onto a platter then serve it w/ gravy on the side.

Turkey Macaroni Salad Recipe

Ingredients:

8 oz of uncooked pasta (Fusilli)
1 c of yogurt
1 tsp of salt
3 c of turkey; cooked and cubed
1 c of mayonnaise
1/4 c of scallions; chopped
1/8 tsp of ground pepper (white)
1 c of celery; chopped

Instructions:

Follow package instructions in cooking pasta. Drain once cooked and place over running water to cool, and have it drained again.

Using a separate bowl, mix mayonnaise, scallions, yogurt, pepper (white) and salt. Gradually add in turkey-meat, celery and pasta. Mix well then transfer in covered container.

Chill ’til ready to serve.

Tangerine-Glazed Turkey Recipe

Ingredients:

1 pc of turkey (whole, 10 lbs); save the giblets and neck
3/4 c of softened butter (unsalted)
3/4 c of canola oil (or vegetable oil)
1-1/2 c of juice (tangerine)
2-1/4 c of stock (turkey)
3 Tbsps of flour (all purpose)
2 c of stuffing (Sausage, Apple & Dried Cranberry)

Instructions:

Preheat your oven at 425 degrees F. Rinse turkey and pat dry. Season salt & pepper on the inside. Place the stuffing inside neck and fold (neck) skin beneath its body then fasten with skewer.

Place the stuffing inside (body) cavity and tie together the legs using (butcher’s) twine. Brush half of butter on turkey then season salt & pepper then place on a (roasting) pan and roast at about twenty-five mins.

While waiting, melt butter with (tangerine) juice and oil; let it cool then reduce oven (temperature) to 325 degrees F.

Use the juice on the (roasting) pan in basting. Soak a cheesecloth into the oil-juice mix and drape turkey.

Roast turkey in an hour prior to basting with oil-juice mix and juices (above cheesecloth) every twenty mins for two and a half hours or more, till meat inside the thigh reaches (180-185 degrees F).

Remove string and cheesecloth then transfer turkey on a hot platter. Save the juice and let turkey rest for twenty-five mins before slicing then spoon out the stuffing on a (serving) dish.

Skim fat in the juice from the pan then save 1/4-cup. Add (1 cup) stock on the pan with juice. Deglaze above moderately-high heat while scraping the brown lumps.

To make gravy, whisk flour and the saved fat inside a saucepan; cook above gentle heat while whisking at about three mins. Add the (deglazed) liquid and the rest of the stock.

Simmer for ten mins while constantly stirring. Pour onto a bowl through a mesh strainer. Add (chopped) giblets and serve with the turkey.

Ingredients:

Salt
Pepper
1 can of jelly (cranberry)
Rind from one lemon; grated
1/4 c of juice (lemon)
1 can of broth (chicken, condensed, 10 1/2 oz)

Instructions:

Remove turkey from roasting dish. Pass an ice around the dripping to let fat coagulate so you can spoon it out easily. Add the broth to the turkey drippings.

Add the lime juice then the rind. Cook on low fire then add the jelly. Add pepper and salt. Add flour to thicken.

Roasted Parsnips with Thyme Recipe

Ingredients:

2 lbs of parsnips (medium); peeled
3 Tbsps of butter (unsalted)
1-1/2 Tbsps of sugar (dark brown)
1 Tbsp of balsamic vinegar
1/4 tsp of black pepper (freshly ground)
1/2 tsp of salt
3 Tbsps of thyme (fresh); chopped coarsely

Instructions:

Preheat oven at 425 degrees F. Cut parsnips into (2 inch) lengths. Slice the thick ones into quarters, the medium-sized ones into half, and the thin ones as is, making all slices of same.

Place butter inside a (baking) dish and place inside the preheated oven. Once butter has melted, add vinegar and sugar; stir well.

Season with salt or pepper. Bake at about twenty mins. Take out pan and add thyme; stir. Continue baking till parsnips turn brown and soft, about ten more mins.

Kentucky BBQ Turkey Sandwich Recipe


Kentucky BBQ Turkey Sandwich Recipe

Ingredients:

2/3 c of tomato catsup
2 c of grilled turkey
2/3 Tbsp of pepper (black)
2/3 tsp of salt
4 pcs burger buns; horizontally split & toasted
2/3 c of vinegar (white)
1 Tsp hot-pepper sauce
1 pc lemon; cut into 4
2/3 Tbsp of Worcestershire

Instructions:

Debone meat and slice to cubes. Afterward, in saucepan place over high-heat, mix vinegar, Worcestershire, pepper sauce, lemon, salt, pepper and catsup. Mix well, then boil.

Adjust heat, then simmer w/o cover for 30-35 mins. Fold turkey in and have it cooked for 5-7 mins ’til heated through.

Scoop a spoonful of BBQ mixture into bottom slice of hamburger buns. Cover w/ the other bun-half.

Slow Cooker Turkey Breast Recipe


Slow Cooker Turkey Breast Recipe

Ingredients:

1 pc of turkey breast fillet (4-5 lbs)
1/2 c of chopped parsley (Italian)
1 Tbsp of crumbled thyme (fresh or a tsp for dried)
1 Tbsp of lemon zest; grated
2 pcs of tart apples; cored, peeled, then chopped
4 pcs of leeks (medium, white part and light green); washed then thinly sliced
1 c of broth (chicken)
1/2 c of white wine (dry)
2 Tbsps of butter; softened
2 Tbsps of flour (all purpose)

Instructions:

Rinse the (turkey) breast then dry using a paper towel. Combine thyme, lemon zest, and parsley; rub above and inside skin; replace the skin then tie with (kitchen) twine.

Place the leeks and apples on a (slow) cooker. Top the meat with skin facing up. Sprinkle (lemon) juice and cover the cooker. Cook above low heat for 8-10 hours till tender. (3.5-4 hrs if above high heat)

Transfer the meat onto a platter; keep it warm. Brown for five mins inside the broiler to make skin brown. Let the meat rest for ten mins before slicing.

With setting on a high, beat wine and broth onto the juice inside the cooker. Combine flour and butter inside a bowl; add onto the cooker.

Cook while stirring frequently, uncovered, till bubbling and thick or about fifteen mins. Stir, then cook for one more minute. Serve the sauce beside the meat.

Ingredients:

8 pcs of sweet potatoes (large)
1/4 c of corn syrup (light)
1/4 c of corn syrup (dark)
2 Tbsps of maple syrup (pure)
1/4 c of bourbon (Kentucky, high quality)
Pepper
Salt
Parsley (fresh); chopped finely

Instructions:

Cook the potatoes and peel them. Slice and allow to cool. Arrange them inside a greased casserole dish. In a bowl, combine syrups, bourbon, pepper, and salt; pour onto the potatoes.

Place inside the oven and bake 350 degrees F till hot and bubbly. Garnish parsley on top.

Pecan Pie Recipe

Ingredients:

For the crust:
1-1/3 c of flour (all purpose)
1 tsp of sugar (white)
1/3 c of vegetable shortening (chilled); cut to bits
1/4 tsp of salt
1/4 c of butter (unsalted, chilled); cut to bits
2 Tbsps of water (chilled)

For the filling:
3 pcs of eggs (large)
1/2 c of corn syrup (light)
1 c of sugar (white)
2 tsps of vanilla extract
1-3/4 c of pecans; chopped
3 Tbsps of butter (unsalted); melted

Instructions:

To make the crust, combine flour, sugar, and salt in a food processor then add butter and shortening then process until it looks like coarse meal.

Add in just enough amount of water, making damp clumps. Form into a ball and flatten to a disk then wrap with plastic. Place inside the refrigerator for an hour.

Once set, roll the dough above floured board into a 13 inch round. Fill it to a 9 inch pie plate. Trim edges aligning with the plate. Place inside the freezer for fifteen mins.

To make the filling, preheat the oven at 350 degrees F. Combine sugar, eggs, syrup, butter, and vanilla in a bowl; whisk thoroughly then fold in (3/4 cup) pecans.

Transfer the filling onto the crust and sprinkle the remaining pecans on top. Bake for an hour and fifteen mins. Let it cool.

Basic Turkey Gravy Recipe


Basic Turkey Gravy Recipe

Ingredients:

1/2 tsp of salt
3 Tbsps of flour
3 Tbsps of fat (poultry drippings)
1 liver (turkey)
1/2 tsp of salt
1 stalk of celery; cut into chunks
1 onion; cut into chunks
1 carrot; cut into chunks
1 pack of turkey giblets (heart, neck and gizzard)

Instructions:

Place heart, neck, veggies and gizzard inside a kitchen pot with water. Bring it to boil. Season with salt. Put lid back on and gently simmer for forty five minutes.

Include the turkey liver then cook for fiften minutes more. Take out the vegetables then the meat then strain the broth using a fine sieve. Set broth aside.

After you finish roasting your turkey, remove turkey from roasting tray. Pour one cup of broth into your roasting tray. Add the fat drippings.

Swirl this mixture. Let it stand for five minutes ’till the fat drippings settle above. Spoon about 2 tablespoons of this fat onto a heated pan.

Discard the left over drippings but still reserve the broth from tray. Meanwhile add salt and flour to you fat drippings then cook until it thickens and turns light brown.

Gradually add the broth in your saucepan, constantly stirring to prevent lumps. Boil mixture until it resembles gravy.

Fruit Salad with Champagne Sauce Recipe

Ingredients:

1 c of kiwi (fresh); peeled then cubed (1/4-inch)
1 c of figs (fresh); peeled then cubed (1/4-inch)
1 c of grapes (fresh); halved
1 c of strawberries (fresh); halved
1 c of raspberries (fresh)
2 pcs of egg yolks
1 c of champagne
1/3 c of sugar (granulated)

Instructions:

Preheat broiler at high.

Divide all the (cut) fruits to four shallow bowls and arrange them attractively. Combine sugar and yolks inside a bowl.

Beat thoroughly till it turns into bright yellow. Gradually add Champagne while beating continuously.

Transfer egg mix on a double boiler above low heat. Continue beating till mixture is foamy and light.

Turn off heat once it begins to become thick, don’t overcook the sauce. Continue beating for ten secs.

Pour onto the fruits. Place bowls of fruit in the preheated broiler. Heat till sauce turns slightly brown. Serve at once.

Chestnut Stuffing Recipe

Ingredients:

1 pc of onion (medium); chopped
1 pc of loaf (stale bread); crumbled then moistened
3 pcs of celery stalks; chopped
1 teaspoon of oregano
1/2 cup of melted butter
2 pieces of eggs; beaten
2 Tablespoons of parsley (fresh)
Pepper
Salt
2 cups of chestnuts

Instructions:

Steam the chestnuts at about twenty mins then remove the shells. Chop the chestnuts coarsely and place inside a bowl.

Add celery, onion, oregano, parsley, bread, pepper, and salt; toss them lightly. Add the butter then the eggs; toss them well.

Add small amount of (clean) water if mixture is very dry and add more of the bread to add the volume.
