Turkey and Pasta Salad Vinaigrette Recipe

Ingredients:

1/2 c of oil (vegetable)
1/2 tsp of powdered garlic
3/4 c of carrot; chopped
1/4 c of onion; chopped
1 c pitted olives (black); sliced
3 c of turkey; cooked, then cubed
1/4 c of white-wine vinegar
A dash of pepper (white)
3/4 c of celery; chopped
3 c of turkey; cooked, then cubed
1 pack of artichoke hearts (frozen); drained after thawed
2 c of cooked pasta (Rotini); drained
Lettuce leaf

Instructions:

In mixing bowl, mix vinegar, oil, pepper and powdered garlic.

Separately combine celery, carrot, rotini and onion in bowl. Add in oil to mixture then toss well. Add artichokes, turkey, and olives, tossing gently to combine all ingredients together.

Place in covered container and then chill. Spoon a portion of mixture to a lettuce leaf and serve.

Shaved Fennel and Apple Salad Recipe


Shaved Fennel and Apple Salad Recipe

Ingredients:

1/4 c of juice (freshly squeezed lemon)
2 Tbsps of tarragon (fresh); chopped
1/3 c of olive oil (extra-virgin)
1/3 c of canola oil (or vegetable oil)
Salt
Black pepper (freshly ground)
2 pcs of apples (Granny Smith); cored, peeled, halved then cut thin slices
2 pcs of fennel (bulbs); cut into thin slices

Instructions:

Combine tarragon, (lemon) juice, and the two kinds of oil inside a bowl; whisk thoroughly. Season it with pepper or salt.

Place apples and fennels inside a mixing bowl. Pour in vinaigrette. Toss well.

Stuffed Acorn Squash Recipe

Ingredients:

2 pieces of squash (acorn)
2 pieces of carrots (grated)
8 ounces of pineapple (crushed, canned)
2 Tablespoons of dried raisins (white)
1/4 teaspoon of ginger

Instructions:

Cut the squash into half and remove the seeds and place on a baking pan. Mix together carrots, pineapple, raisins, and ginger then place inside the cavities of the squash.

Bake for half an hour at 350 degrees F or till squash becomes soft but firm.

Ambrosia Salad Recipe

Ingredients:

1 c of mixed fruit (or fruit cocktail); drained
1/2 c of oranges (Mandarin)
1/2 c of pineapple tidbits
1/4 c of cherries (maraschino); halved
1/2 c of marshmallows (miniature)
1/4 c of red grapes (seedless)
3/4 c of sour cream
Iceberg lettuce

Instructions:

Combine the fruits with the marshmallows, and sour cream in a large bowl. Mix well and chill. Serve on lettuce with your preferred dressing.

Guilt-Free Turkey Gravy Recipe

Ingredients:

Salt
Ground black pepper
4 c of turkey broth
Pan drippings (fats removed)
1/4 c of water
1/4 c of cornstarch

Instructions:

Mix together pan drippings and broth. Bring these to boil. Mix together water and cornstarch. Whisk cornstarch mix into the pan. Stir constantly ’till broth thickens to become gravy. Add a dash of pepper and salt.

Alphabet Turkey Soup Recipe

Ingredients:

1 medium can of tomatoes (16 oz)
2 Tsps of seasoning (Italian)
1/4 tsp of pepper
2 c of turkey; cooked and sliced into half-inch cubes
1 c of carrots; sliced thinly
4 c of turkey stock
1/2 tsp of salt
1 c of chopped onion
4 c of cabbage; sliced thinly
1/2 c of alphabet pasta

Instructions:

In a large saucepan, combine broth, seasoning, pepper, salt, carrots, onions, and tomatoes over high-heat, then let it boil.

Adjust to low-heat then simmer for 10-15 mins or ’til carrots become soft but firm. Have pasta, turkey & cabbage added and boil for 5-10 mins more or ’til pasta becomes al dente and cabbage becomes tender.

Sweet Potato Casserole Recipe

Ingredients:

2 lbs. sweet potatoes, boiled, peeled and mashed
1/2 cup brown sugar
1 cup buttermilk
1/4 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 eggs, beaten
2 ozs margarine, melted

Instructions:

Preheat the oven at 350 degrees F.

Combine sweet potatoes, eggs, margarine, sugar, soda, nutmeg, buttermilk, and cinnamon; incorporate well. Bake inside the oven for an hour. Serve warm.

Scalloped Corn & Tomatoes Recipe

Ingredients:

15 oz of tomatoes (canned); drained
15 oz of whole kernel corn (canned); drained
15 oz of cream style corn (canned)
2 pcs of beaten eggs
1/4 c of flour; sifted
1 Tbsp of sugar (white)
1 tsp of pepper
1/2 tsp of garlic powder
2 c of bread crumbs (soft)
1/2 c of cheese (Parmesan); shredded
1/3 c of butter (or margarine)
1 pc of onion; minced

Instructions:

Preheat the oven at 350 degrees F. Grease a medium-sized casserole by spraying a nonstick vegetable spray.

Combine cream style corn, whole kernel corn, tomatoes, flour, pepper, eggs, and sugar; stir well. Pour onto the greased casserole.

Melt the butter on the skillet above moderate heat then saute the onion till it becomes limp. Add crumbs, cheese, and powdered garlic; combine well.

Spread onto the corn mixture inside the prepared casserole then bake inside the preheated oven for an hour.

Pearl Onions Glazed with Mustard & Brown Sugar Recipe

Ingredients:

2 Tbsps of butter (unsalted)
16 oz of onions (frozen, small); thawed
2-1/2 Tbsps of sugar (light brown)
1 Tbsps of mustard (Dijon)
2 Tbsps of parsley (fresh); minced

Instructions:

Melt butter on a skillet above moderate heat then add onions. Saute till onions become brown, stir frequently at about 10-12 mins.

Add sugar then slowly add mustard; cook for 2 more mins. Sprinkle parsley. Serve while hot.

Ingredients:

15 1/4 oz of kernel corn (whole, canned); drained
15 oz of creamed corn (canned)
1/2 c of softened margarine
1 c of sour cream (dairy)
8.5 ozs of cornbread mix (dry)

Instructions:

Preheat the oven at 350 degrees F. Slightly butter a casserole pan (or dish).

Combine (sour) cream, corn, creamed corn, cornbread mix, and margarine inside a bowl; blend them well then pour onto the pan. Bake inside the oven for forty-five mins.

Turkette Hotdish Recipe

Ingredients:

4 c of turkey; cooked and diced
3 celery stalks; chopped
1 c of water
2 c of cream-of-chicken soup (10 & 3/4 oz each can)
1/2 c of butter
1/4 c of onions; diced
1 pack of croutons
A can of cream-of-celery soup (10 & 3/4 oz)

Instructions:

In 9×13-inch bake pan, arrange turkey at the bottom part.

In saucepan, place butter, celery, and onions then saute. Add in water and croutons. Mix well. Spread mixture over turkey-meat.

In separate bowl, mix together soups w/ milk enough to achieve pouring consistency. Spread all over crouton-mixture. Bake at 350 degrees F for an hour.

Cranberry Gravy Recipe


Cranberry Gravy Recipe

Ingredients:

Salt
Pepper
1 can of jelly (cranberry)
Rind from one lemon; grated
1/4 c of juice (lemon)
1 can of broth (chicken, condensed, 10 1/2 oz)

Instructions:

Remove turkey from roasting dish. Pass an ice around the dripping to let fat coagulate so you can spoon it out easily. Add the broth to the turkey drippings.

Add the lime juice then the rind. Cook on low fire then add the jelly. Add pepper and salt. Add flour to thicken.

Basic Turkey Gravy Recipe


Basic Turkey Gravy Recipe

Ingredients:

1/2 tsp of salt
3 Tbsps of flour
3 Tbsps of fat (poultry drippings)
1 liver (turkey)
1/2 tsp of salt
1 stalk of celery; cut into chunks
1 onion; cut into chunks
1 carrot; cut into chunks
1 pack of turkey giblets (heart, neck and gizzard)

Instructions:

Place heart, neck, veggies and gizzard inside a kitchen pot with water. Bring it to boil. Season with salt. Put lid back on and gently simmer for forty five minutes.

Include the turkey liver then cook for fiften minutes more. Take out the vegetables then the meat then strain the broth using a fine sieve. Set broth aside.

After you finish roasting your turkey, remove turkey from roasting tray. Pour one cup of broth into your roasting tray. Add the fat drippings.

Swirl this mixture. Let it stand for five minutes ’till the fat drippings settle above. Spoon about 2 tablespoons of this fat onto a heated pan.

Discard the left over drippings but still reserve the broth from tray. Meanwhile add salt and flour to you fat drippings then cook until it thickens and turns light brown.

Gradually add the broth in your saucepan, constantly stirring to prevent lumps. Boil mixture until it resembles gravy.

Fruited Sweet Potatoes Recipe

Ingredients:

8 ozs of pineapple, crushed & drained
40 ozs of sweet potatoes (cooked); drained, peeled then mashed
1/4 c of bourbon
1/4 c of sugar (brown)
1/4 c of raisins (golden)
1/4 c of coconut; shredded
1/3 c of walnuts; chopped
1 tsp of salt
2 tsps of pumpkin pie spice
Cooking spray (vegetable)

Instructions:

Preheat the oven at (350 degrees F). Spray a casserole pan (or dish) with the (cooking) spray.

Combine potatoes, bourbon, pineapple, raisins, sugar, spice, salt, coconut, and walnuts; pour onto the pan. Bake for forty mins.
