Apple Stuffing Recipe
Ingredients:
1/4 cup of onions; chopped
1/4 cup of celery; chopped
2 Tablespoons of margarine
1/2 teaspoon of seasoning
4 cups of bread cubes (dry)
1 cup of apples (unpeeled); diced
1/2 teaspoon of sage (dried)
1/2 teaspoon of sage (dried)
Black pepper (freshly ground)
1/2 cup of broth (chicken)
Instructions:
Cook the celery and onions in the margarine at about five mins or till they become tender or limp. Add bread cubes, seasoning, sage, apples, and black pepper. Mix well then add the chicken broth. Toss.

Grilled Whole Turkey Recipe
Ingredients:
1 tsp of paprika
1/2 tsp of parsely; chopped
1 tsp seasoning
2 tsps of onion powder
3 Tbsps of chicken cube
2 tsps of garlic powder
2 c of water
1 whole turkey
Instructions:
Prepare your grill. Grease the grates. Clean turkey.
Put turkey (breast side down) onto your grill. You need to sear the turkey on all sides. Using a roasting dish, combine water, chicken cubes, onion and garlic seasoning, paprika and pepper.
Place your turkey inside baking dish. Cover snugly with alum foil. Grill your turkey for three hours ’till core temperature is reached (180 degrees F).

Port-Basted Roast Turkey with Gravy Recipe
Ingredients:
3 Tbsps of flour
1 pc of carrot; cut into chunks
1 pc of onion ; cut into chunks
1 c of water
1/2 c of port (Tawny)
1.5 c of chicken stock
1/2 stick of butter; softened
1 whole turkey (14 lbs); neck and giblets reserved
1 pc of apple; pared, cored & chopped
Instructions:
Clean turkey. Rub your turkey w/ butter on all sides including inside the skins pockes. Season with pepper and salt. Cover with cheese cloth.
Set on a baking tray and pop in the oven for one hour. Using a separate pan, heat chicken broth and port together ’till it is boiling. Add butter.
After one hour, include the apples and veggies in the roasting dish. Coat turkey using chicken broth mixture. Baste wih pan drippings as well.
Continue to cook turkey for two more hours. When your turkey is cooked, transfer it to serving platter. Heat roasting dish over low fire. Add flour to thicken sauce. Boil it until the sauce is thick.

Coconut Pie Recipe
Ingredients:
3 pcs of beaten eggs
1-1/2 c of sugar (white)
1/2 c of melted margarine
4 tsps of juice (freshly squeezed lemon)
1 tsps of vanilla extract
1-1/3 c of coconut
1 pc of 9-inch pie crust (unbaked)
1/8 tsp of salt
Instructions:
Preheat the oven at 350 degrees F.
Combine eggs, sugar, margarine, lemon juice, vanilla extract, and salt; incorporate well. Fold in the coconut. Transfer the mixture onto the pie crust. Bake for 40 to 45 mins.

Brown Rice Dressing Recipe
Ingredients:
4 cups of broth from boiled giblets (then add water in case it is not enough)
1/2 cup of butter (or olive oil)
1 pc of onion (large); minced
2 pcs of bell peppers (red); sliced
2 pcs of celery; cut into thin slices
1 pc of garlic clove; peeled then chopped finely
1 cup of mushrooms; cut into thin slices
1 pc of tart apple (large); chopped
2 teaspoons of Worcestershire
1/2 cup of raisins (or currants)
1/2 teaspoon of curry powder
1/2 cup of nuts; chopped
1 teaspoon of basil
2 cups of rice (brown)
Instructions:
Cook the rice with the liquid for forty-five mins or till done. While waiting for the rice to cook, saute the onion, celery, bell peppers, mushrooms, and garlic in oil or butter.
When the vegetables become tender or limp, add tart apple, raisins, Worcestershire, curry, basil, and nuts. Toss them together and let it stand to let the flavors blend or wait till the rice has cooked.
Mix the sauteed vegetables and the rice. Stuff inside the turkey. Bake the remaining stuffing in the casserole for half an hour.

Oyster Dressing Recipe
Ingredients:
1/2 cup of chopped celery
1/2 cup of chopped onion
1 pc of bay leaf
6 cups of bread crumbs (dry)
1/4 cup of butter
1 Tablespoon of chopped parsley
3 cups of chopped oysters (raw)
1 teaspoon of seasoning (for poultry)
Pepper
Salt
2 pcs of beaten eggs
1-3/4 cups of oyster liquor (and add milk when needed)
Instructions:
Cook bayleaf, celery, and onion with butter till it becomes tender, do not let it brown. Remove the bayleaf then add parsley and breadcrumbs, stir well.
Add eggs, oysters, and seasonings. Stir thoroughly. Add just enough amount of liquid to let the mixture moisten.
Use this at once, this can stuff 10-12 pounds of turkey.

Crockpot Scalloped Potatoes Recipe
Ingredients:
8 pcs of potatoes; sliced thinly
1 can of soup (Cheddar cheese)
1 c of cheese (Velveeta); chunked
1-1/2 c of cheese (sharp Cheddar); grated
12 oz of evaporated filled milk
Pepper
Salt
Instructions:
Spray a vegetable (cooking) spray on a crockpot. Fill in potatoes (half full). then layer (1/2 can) soup, (1/2 cup) Velveeta, (3/4 cup) Cheddar, and (1/2 can) milk.
Season with salt & pepper. Layer (1/2 can) soup, (1/2 cup) Velveeta, (3/4 cup) Cheddar, and (1/2 can) milk. Cook above high heat for six hours. Add milk if needed.

Spiced Streusel Apple Pie Recipe
Ingredients:
1 pie shell or crust (flaky)
ice cream (vanilla)
For the Streusel:
1/2 c of sugar (golden brown)
2/3 c of walnuts
1/4 c of cornmeal (yellow)
1/4 c of flour (all purpose)
3/4 tsp of cinnamon (ground)
1/2 tsp of nutmeg (ground)
5 Tbsps of butter (unsalted, chilled); cut to bits
For the Filling:
4 1/2 c of apples (Granny Smith); peeled, cored, quartered, cut to wedges
1/4 c of sugar (white)
1/2 c of sour cream
2 Tbsps of flour (all purpose)
1.5 tsps of cinnamon (ground)
3/4 tsp of nutmeg (ground)
1/4 tsp of cloves (ground)
Instructions:
To make the streusel, place nuts, flour, cornmeal, nutmeg, sugar, and cinnamon in the food processor. Process till chopped finely then add the butter; process till it resembles soft lumps.
To make the filling, preheat the oven at 375 degrees F. Toss the apples together with the sour cream inside a bowl.
Combine nutmeg, flour, cloves, and cinnamon; sprinkle over the apples. Toss well for the apples to be coated well.
Transfer the filling onto the crust then sprinkle the streusel above the apples, making it completely covered.
Bake the pie till apples soften and the streusel turns golden, or about an hour. If the streusel has browned quickly, tent it with aluminum foil.
Let it cool for a while. Serve while warm and scoop ice cream on top.

Southern Cornbread and Oyster Dressing Recipe
Ingredients:
1/4 c of butter (unsalted)
1 pc of chopped onion (large)
4 pcs of chopped onions (green)
2 pcs of chopped celery stalks
3 c of cornbread (crumbled)
3 c of breadcrumbs (soft)
1/2 c of chopped parsley (fresh)
Pepper
Salt
2 c of oysters (shucked); drained
2 pcs of eggs (large); beaten slightly
1/2 c of oyster liquid (from drained oysters)
Instructions:
Preheat the oven at (350 degrees F).
Saute celery and onions in (2 tablespoons) butter till limp but do not let it brown. Combine breadcrumbs and cornbread inside a bowl.
Add sauteed mixture, parsley, and salt & pepper; mix well. Add eggs then toss; add enough liquid to moisten, do not make it soggy, then add oysters.
Transfer mixture onto a slightly buttered pan. Dot it using the rest of butter then bake for forty-five mins till slightly brown.

Vegetable Casserole Recipe
Ingredients:
A can of beans (French-style, green); drained
1/2 c of sour cream
A can of soup (cream of celery)
1 c of chopped bell pepper (green)
A can of corn (shoepeg); drained
1/2 c of grated cheese (Parmesan); grated
1 c of chopped celery
For the Topping:
1/4 c of chopped almonds
1/2 c of melted butter (or margarine)
A stack of crushed crackers (Ritz)
Instructions:
Combine beans, celery, sour cream, cream of celery, corn, bell pepper, and cheese inside a buttered (casserole) dish. You can add more cheese if desired.
Combine almonds, butter, and crackers then spread evenly above the mixed vegetables. Bake inside the oven at 350 degrees F for forty-five mins.

Alphabet Turkey Soup Recipe
Ingredients:
1 medium can of tomatoes (16 oz)
2 Tsps of seasoning (Italian)
1/4 tsp of pepper
2 c of turkey; cooked and sliced into half-inch cubes
1 c of carrots; sliced thinly
4 c of turkey stock
1/2 tsp of salt
1 c of chopped onion
4 c of cabbage; sliced thinly
1/2 c of alphabet pasta
Instructions:
In a large saucepan, combine broth, seasoning, pepper, salt, carrots, onions, and tomatoes over high-heat, then let it boil.
Adjust to low-heat then simmer for 10-15 mins or ’til carrots become soft but firm. Have pasta, turkey & cabbage added and boil for 5-10 mins more or ’til pasta becomes al dente and cabbage becomes tender.
