Turkey Chili Recipe
Ingredients:
1 Tbsp of cilantro
1 c of bell pepper (green); chopped
2 garlic cloves; minced
1 c of wine (red)
2 large cans of kidney beans (15 &1/2 ounces); drained
1 Tbsp of chili seasoning powder
1/2 tsp of salt
1 tsp of flaked red pepper; crushed
3 Tbsps of oil
1 & 1/4 c of onion; chopped
1 big can of stewed tomatoes (28 oz); crushed
3 c of turkey; cooked and sliced into half-inch cubes
Instructions:
In saucepan placed over mid-heat, saute bell peppers, garlic and onion w/ oil ’til veggies turn tender-crisp (5 mins). Add in wine, beans, turkey, tomatoes, chili seasoning powder, peppers, salt and cilantro.
Adjust to high-heat then allow to boil. Adjust to low-heat then simmer the mixture w/o cover for twenty-five minutes.
Garnish w/ chopped cilantro or onions prior to serving.

Deep-Fryed Turkey Recipe
Ingredients:
1 large onion (white)
1/4 c seasoning mix (Creole)
1 turkey; giblets and neck removed
3 gal of oil (peanut oil)
Instructions:
Clean turkey. Season with Creole mix. Rub on all sides of your turkey.
Prepare deep fryer. Boil up the peanut oil (350 degrees F). Slowly dunk in turkey neck side first into your deep fryer. Cook this for about forty five minutes.
Turkey is cooked all the way through once core temperature is reached (180 degrees F).

Grilled Whole Turkey Recipe
Ingredients:
1 tsp of paprika
1/2 tsp of parsely; chopped
1 tsp seasoning
2 tsps of onion powder
3 Tbsps of chicken cube
2 tsps of garlic powder
2 c of water
1 whole turkey
Instructions:
Prepare your grill. Grease the grates. Clean turkey.
Put turkey (breast side down) onto your grill. You need to sear the turkey on all sides. Using a roasting dish, combine water, chicken cubes, onion and garlic seasoning, paprika and pepper.
Place your turkey inside baking dish. Cover snugly with alum foil. Grill your turkey for three hours ’till core temperature is reached (180 degrees F).

Broccoli Casserole Recipe
Ingredients:
10 oz of broccoli (frozen)
10 oz of condensed soup (cream of mushroom, canned)
2 c of rice (Minute)
1/4 c of butter (or margarine)
3/4 c of onion; chopped
16 oz of cheese sauce (pasteurized & processed)
Pepper (black, ground)
Salt
Instructions:
Cook the rice according to the package instructions. Cook the broccoli according to package instructions then drain.
Saute the onions with butter till golden, add cheese, butter, rice, broccoli, and soup. Season salt & pepper. Transfer to a 9×13 baking dish and bake at (350 degrees F) for 30-40 mins.

Turkey Stock Recipe
Ingredients:
Carcass of turkey w/ 2 c of meat (cooked) remaining
3 c of onions (sweet); sliced thinly
1 tsp of salt
2 Tbsps of oil (cannola)
1/2 tsp of fresh powdered pepper (black)
1/2 tsp of dry thyme leaves
2 c of carrots; skinned & iced thinly
1/2 tsp of powdered sage
1 & 1/2 c of celery; slice into inch-sized pieces
Instructions:
Separate meat from the carcass then have it chopped into bite-size cuts. Set aside in the refrigerator, covered. Chop carcass to several pieces.
In Dutch oven, saute your onions in oil ’til soft & light-browned. Stir turkey-bones, pepper, salt, 2 qts water and herbs. Adjust to high-heat and allow to boil quickly.
Once boiled, adjust to low-heat. cover & simmer it for an hour (stir occasionally).
Remove & discard the carcass. Add in veggies, cover then simmer it for twenty to twenty-five minutes more.
Adjust to high-heat and boil quickly. Lower to mid-heat and then cook for 8-12 more minutes ’til veggies become tender.
Add in the reserved meat. Heat it for five to ten minutes more at low-heat.

Sesame Turkey Recipe
Ingredients:
3 Tbsps plus 1/2 Tbsp of oil (sesame)
1/8 tsp of cayenne pepper
1/2 tsp of salt
1 garlic clove; crushed
2 Tbsps of soysauce
1 c of sesame seeds
1/8 tsp of pepper (black)
3 Tbsps of oil (peanut)
4 turkey slices (breast part), cooked
Instructions:
Have meat slices brushed w/ oil (sesame) then dredge into seeds, peppers and salt mixture.
Saute meat slices w/ oil (peanut) in a skillet ’til evenly browned.
Transfer into a plate. Deglaze w/ remaining oil, soysauce and garlic. Pour the sauce evenly over your meat.

Slow Cooker Turkey Breast Recipe
Ingredients:
1 pc of turkey breast fillet (4-5 lbs)
1/2 c of chopped parsley (Italian)
1 Tbsp of crumbled thyme (fresh or a tsp for dried)
1 Tbsp of lemon zest; grated
2 pcs of tart apples; cored, peeled, then chopped
4 pcs of leeks (medium, white part and light green); washed then thinly sliced
1 c of broth (chicken)
1/2 c of white wine (dry)
2 Tbsps of butter; softened
2 Tbsps of flour (all purpose)
Instructions:
Rinse the (turkey) breast then dry using a paper towel. Combine thyme, lemon zest, and parsley; rub above and inside skin; replace the skin then tie with (kitchen) twine.
Place the leeks and apples on a (slow) cooker. Top the meat with skin facing up. Sprinkle (lemon) juice and cover the cooker. Cook above low heat for 8-10 hours till tender. (3.5-4 hrs if above high heat)
Transfer the meat onto a platter; keep it warm. Brown for five mins inside the broiler to make skin brown. Let the meat rest for ten mins before slicing.
With setting on a high, beat wine and broth onto the juice inside the cooker. Combine flour and butter inside a bowl; add onto the cooker.
Cook while stirring frequently, uncovered, till bubbling and thick or about fifteen mins. Stir, then cook for one more minute. Serve the sauce beside the meat.
