Discover The Superbly Delicious Pumpkin Cream Cheese Roll Cake!

Thanksgiving usually means lots of food. The usual roasted turkey and of course an array of delicious desserts. For my Thanksgiving I usually make this really great tasting pumpkin roll cake that has a very delish filling of cream cheese.

This pumpkin roll cake actually takes a bit of time in its preparation but it will really be all worth it. For sure, after you serve this up to friends and family that you’ll receive compliments all the time and if you’ve still got some left over cake left, you can always keep them inside airtight containers and enjoy them later.

So here is the recipe and I hope that you’ll like it.

Pumpkin Roll Cake With Cream Cheese Filling

Recipe Ingredients

Wax paper (to line baking pan)

For cake base:
3/4 c flour (all-purpose)
1/4 c sugar (powdered)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon; ground
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp salt
3 eggs
1 c sugar
1 c pumpkin (fresh or canned)
1 c finely chopped nuts (optional), (such as pecans or walnuts)

For the filling:
8 ounces cream cheese (room temp)
1 c sugar (powdered)
6 tablespoons butter (room temp)
1 tsp vanilla

You’ll need a 10-inch by 15-inch baking pan and the ingredients listed at the right.

Preheat your oven to 375 degrees F (190 degrees).

Prepare the cake:

Line the baking pan using wax paper, then grease and flour the paper. Into a small bowl, mix cinnamon, baking powder, baking soda, flour, nutmeg, ginger, cloves & salt together. Into a big bowl of an electric mixer at medium speed, beat together your eggs and sugar. Add pumpkin and beat until well blended. Reduce speed and stir in spiced flour mix.

Spread pumpkin spice batter on your baking pan evenly. Sprinkle nuts (optional). Bake 10 to 15 minutes, test by pressing finger into cake to check for firm, but moist, texture. Sprinkle powdered sugar onto a thin cotton kitchen towel (helps prevent cake from sticking to the towel). Remove cake from oven and turn onto the powdered towel, leaving the wax paper attached to your cake.

Slowly peel off the wax paper and roll up cake and towel together and allow cooling on a rack.

Prepare the filling:

In a medium mixing bowl, beat cream cheese, powdered sugar, butter & vanilla together. Mixture should be smooth. Slowly unroll your cake, spread the filling mixture on your cake. Roll up cake then wrap tightly in plastic wrap. Refrigerate at least 1 hour prior to serving. Sprinkle with powdered sugar then serve.

If you don’t like going to your local markets, you can also order food to be delivered as gifts from the internet. You might even find a wider variety online. But before purchasing it’s best to read the buyer’s feedbacks on that item you are planning on buying first.

Items should have reasonable or fair prices and the quality should be in accordance with standards. If you’re not sure about certain things, play safe. A trusted company will always have a lot of positive feedbacks.

How To Cook That Succulent And Juicy Turkey

The centerpiece of your Thanksgiving meal would be the roasted turkey & it has been the king of your dinner table ever since Thanksgiving traditions began in the US. There really are lots of great recipes out there on how to roast turkey right but take note that the simpler the roast turkey recipe is, the better. It’s best to just have the basic ingredients so that your turkey really will still taste like that of turkey & not like the other ingredients that you’re using.

The dressing still is considered the best accompaniment to your turkey then it is followed a close 2nd by some mashed potatoes, deviled eggs & the potato salad. With those dishes to accompany your turkey for sure you’ll have a really delicious dinner which is good but turkey should still be left just the way it is, taste should still be that of turkey.

Most people usually wake up very early during Thanksgiving and they cook their turkey within a couple of hours & then wonder why their turkey turned out a bit tough. Actually turkey’s best cooked overnight so that you’ll achieve that roasted turkey that is full of flavor & so lusciously tender to the bite.

Cooking turkey overnight on your gas-fueled oven at low settings is really best but it is also a bit risky. It makes me stay awake overnight when roasting turkey inside the gas oven. I set its temp. at around 200 deg. F then at about 7AM, I just turn up temp. to around 350 deg. F and let the cooking finish within 2 hrs.

You could try & cook your turkey on the day itself when you’ll serve them up using an electrically operated oven but you’ll be sacrificing its flavor & it won’t be tender at all. Again, cooking your turkey overnight still is one of the best things to do.

Although cooking electrically is less risky when doing overnight cooking, it really is more expensive. Since you’ll be doing the cooking for the whole day, then temperatures will rise a bit in your kitchen. Using your electric roaster is actually one great way of cooking your turkey. It is not as expensive as using those gas ranges and it’s safer compared to those gas ovens. Also it creates lesser heat compared to the gas & electrically operated oven.

Just place your turkey inside your roaster at around 11PM & cover turkey using lots of margarine. Season with pepper and salt. Temperature should then be set to around 200 deg. F. Then you could now go back to sleep without worrying about anything.

If sometimes during the middle of the night you wake up, then baste your turkey prior to going right back to sleep. Next morning when you’re waking up at 7AM, turn your temp. to around 350 deg. F. then baste turkey for about 2-3 times during the last hours of cooking.

Your bird will cook after 3 hrs, and for sure the bird will really be tender and “fall of the bones” tender. So use your roaster because it’s the ideal way of cooking your turkey & save you much money and will give you that succulent and juicy Turkey for your centerpiece.

A lot of people usually snack the whole day during Thanksgiving, and just when your turkeys finally done with its trimmings your guests are already full and now your efforts might not be appreciated by everyone. Does this sound a bit familiar?

Shopping on a Thanksgiving Weekend

Planning on getting that shopping-spree together with family and friends during your Thanksgiving weekend just to cross off those heavy Christmas shopping list? Invite your family or friends to go back in your lovely house to be able to relax and enjoy a hot cup of great tea.

When shopping the whole day, tendency is you’d get too tired then you wouldn’t like to go back at home just to work on your meals for food, although you usually enjoy preparing things during a night prior to your shopping trips.

Spiced Pumpkin Bread Recipe

Ingredients:

3 c of sugar (white)
1 c of vegetable oil (or canola oil)
3 pcs of eggs (large)
16 oz of pumpkin (canned)
3 c of flour (all purpose)
1 tsp of cloves (ground)
1 tsp of cinnamon (ground)
1 tsp of nutmeg (ground)
1 tsp of baking soda (Arm & Hammer)
1/2 tsp of baking powder (Calumet)
1/2 tsp of salt
1 c of walnuts; chopped coarsely

Instructions:

Preheat the oven at 350 degrees F. Grease two 9×5x3 inch pan and dust with flour. Combine oil and sugar in a bowl; beat thoroughly. Add in the pumpkin and eggs; mix well.

Combine cinnamon, cloves, soda, Calumet, salt, flour, and nutmeg. Add into the pumpkin mix by two batches. Incorporate well and fold in the walnuts.

Pour the batter onto the pans equally. Bake for an hour and ten mins. Let it cool for ten mins before removing it from the pan.

Place the bread on a platter; allow for it to be completely cooled.

Maple Roast Turkey and Gravy Recipe


Maple Roast Turkey and Gravy Recipe

Ingredients:

2 Tbsps of brandy
1 Laurel leaf
1 tsp of thyme (fresh); minced
3 tsps of flour
2 c chicken broth
1 c of carrots; cut into chunks
1 c of celerey; diced
2 c of onion; diced
1 whole turkey (14 lbs); reserve neck and giblets
Salt
Pepper
3/4 c of butter
2 1/2 tsps of lemon rind
2 Tbsps of thyme (fresh); minced
2 Tbsps of marjoram (fresh); minced
1/3 c maple syrup
2 c of cider (apple)

Instructions:

Mix the cider with the maple syrup. Bring this to boil. Season it with pepper and salt. Take out from heat then add your herbs and lemon rind.

Add your butter then blend until it is melted. Place inside a container and set it aside.

Preset oven (350 degrees F). Clean turkey then set on a baking tray. Lift off skin and rub the cider maple syrup inside the skins of your turkey.

Afterwards, rub the cider mixture on all sides of your turkey. Pop inside the oven for thirty minutes. Cover your turkey using alum foil and return inside the oven and cook for three hours more.

When turkey is baked, transfer this onto a serving platter. Strain the left over pan drippings. Return this to your baking tray. Add chicken broth. Cook on low heat.

Add flour in order to thicken mixture. Combine the remainder of your cider mix. Place herbs. Season using pepper and salt. Put one laurel leaf. Cook ’till it is thick.

Basic Turkey Gravy Recipe


Basic Turkey Gravy Recipe

Ingredients:

1/2 tsp of salt
3 Tbsps of flour
3 Tbsps of fat (poultry drippings)
1 liver (turkey)
1/2 tsp of salt
1 stalk of celery; cut into chunks
1 onion; cut into chunks
1 carrot; cut into chunks
1 pack of turkey giblets (heart, neck and gizzard)

Instructions:

Place heart, neck, veggies and gizzard inside a kitchen pot with water. Bring it to boil. Season with salt. Put lid back on and gently simmer for forty five minutes.

Include the turkey liver then cook for fiften minutes more. Take out the vegetables then the meat then strain the broth using a fine sieve. Set broth aside.

After you finish roasting your turkey, remove turkey from roasting tray. Pour one cup of broth into your roasting tray. Add the fat drippings.

Swirl this mixture. Let it stand for five minutes ’till the fat drippings settle above. Spoon about 2 tablespoons of this fat onto a heated pan.

Discard the left over drippings but still reserve the broth from tray. Meanwhile add salt and flour to you fat drippings then cook until it thickens and turns light brown.

Gradually add the broth in your saucepan, constantly stirring to prevent lumps. Boil mixture until it resembles gravy.

Fruit Salad with Champagne Sauce Recipe

Ingredients:

1 c of kiwi (fresh); peeled then cubed (1/4-inch)
1 c of figs (fresh); peeled then cubed (1/4-inch)
1 c of grapes (fresh); halved
1 c of strawberries (fresh); halved
1 c of raspberries (fresh)
2 pcs of egg yolks
1 c of champagne
1/3 c of sugar (granulated)

Instructions:

Preheat broiler at high.

Divide all the (cut) fruits to four shallow bowls and arrange them attractively. Combine sugar and yolks inside a bowl.

Beat thoroughly till it turns into bright yellow. Gradually add Champagne while beating continuously.

Transfer egg mix on a double boiler above low heat. Continue beating till mixture is foamy and light.

Turn off heat once it begins to become thick, don’t overcook the sauce. Continue beating for ten secs.

Pour onto the fruits. Place bowls of fruit in the preheated broiler. Heat till sauce turns slightly brown. Serve at once.
