Scrumptious Thanksgiving “Sweet Potato” Recipes!
During Thanksgiving it seems like it’s never complete if yams or sweet potatoes aren’t included in your Thanksgiving dinner list. If you’re not an American the tendency is you’re not familiar about this crop.
The sweet potato originally is from the South Americas. They’re now being harvested in warmer places. They were brought to American shores during the time the migrant slaves settled in America.
The sweet potatoes are different from your regular potatoes since they’re actually used as filling in pies and this has been practiced in South America. Below are some sweet potato dishes that have always been a familiar sight during any Thanksgiving celebration.
1) Simple Baked Delicious Sweet Potato
Very easy and fuss-free to do. Just simply wash your sweet potatoes clean. Next, stab the potato using a clean fork to make holes for steam to escape during cooking time. Wrap each potato with foil and bake inside your 325 deg. F oven for about 90 mins..
2) Twice-Baked Sweet Potato
Just bake your sweet potatoes (skins on) until they turn soft. After they have baked, slice them into half & scoop their flesh out and place inside a bowl. Mash your scooped out sweet potato flesh then add in brown sugar, any spice you want and butter. After mixing well, place your mashed up potatoes back in their flesh then cover them with some bread crumbs. Place inside your oven and bake again for 25 mins. or until the crumbs turn golden brown.
3) Sweet Potato with Marshmallows
A lot of families usually feel that it isn’t Thanksgiving when they don’t have different kinds of sweet potato dishes especially the ones with the marshmallows in it. There are lots of variations of the sweet potato dish with mallows and also families sometimes have their very own traditional versions. A lot of the recipes includes sweet potatoes (canned), crushed pineapples, spices, vanilla & brown sugar. Combine all your ingredients and bake them inside an oven-proof baking pan.
4) Simply Delish Sweet Potato Casserole
Finally, sweet potato casseroles usually are the biggest hit during Thanksgiving. This way of cooking often requires minimal effort on your part. Very easy to make. You will just need to mash up your already baked sweet potatoes then mix them well with other ingredients that your family would love. After they have mixed well, just place all your mashed up and flavored sweet potatoes on an oven-safe casserole and bake inside your oven.

Creamed Onions Recipe
Ingredients:
15-1/2 oz of onions (small, white)
2 Tbsps of butter (unsalted)
1 Tbsp of flour
1-1/4 c of milk
1/4 tsp of mace
1/2 tsp of salt
1/16 tsp pepper (black)
1/4 c of breadcrumbs (dry)
Instructions:
Drain onions and save half cup of liquid. Place butter inside a saucepan above gentle heat. Once melted, take out from heat and add flour; stir thoroughly till smooth.
Gently add milk and (onion) liquid. Let it boil while stirring slowly for a minute then add onions, pepper, salt, and mace.
Heat it thoroughly then pour onto a (casserole) dish. Spread over the breadcrumbs. Cook under broiler at about two mins, letting its top turn brown

Pueblo Pie Recipe
Ingredients:
1 Tbsp of olive oil (virgin or extra virgin)
1 pc of onion (medium); chopped finely
1 pc of bell pepper (medium, red, green or yellow); seeded then chopped finely
4 cloves of garlic (medium)
1 pc of pepper (jalapeno)
16 oz of tomato sauce (unsweetened, canned)
16 oz of beans (black, canned)
16 oz corn (canned)
2 tsp of chili powder
1/2 tsp of sea salt (fine)
2 tsp of cumin (ground)
3 c of water (at room temperature)
1 c of cornmeal (yellow, stone-ground)
1 Tbsp of juice (freshly squeezed lemon)
1 tsp of mustard (Dijon)
1/2 tsp of sea salt (fine)
Cheese (Mozzarella); shredded
1/2 tsp of cayenne pepper
Instructions:
Heat oil on a pan above moderately high heat. Once heated, add garlic, onion, and pepper. Cook till softened for 6 to 8 mins.
Turn off heat, mix in (tomato) sauce, corn, beans, salt, cayenne, chili, and cumin. Stir thoroughly then mash, making it thicker.
Pour onto an 8×8 inch baking glass dish and sprinkle the Mozzarella above corn mix. Preheat oven at (350 degrees F).
Boil the water then add salt, lemon, cornmeal, and mustard inside a saucepan; stir thoroughly till mixed.
Continue to boil above moderately high heat. Once boiling, reduce heat into low, allowing to simmer while stirring frequently till thick or 3-5 mins.
Spread (cooked) cornmeal above bean mix. Bake inside oven for half an hour and let it cool at about ten mins. Serve at once.

Sweet Potato-Pecan Pie Recipe
Ingredients:
1 pc of pie crust (deep-dish)
1 lb of sweet potato (red-skinned); pierced using a fork
2 Tbsps of melted butter (unsalted)
1/2 c of sugar (golden brown)
1 Tbsp of vanilla
1/2 tsp of cinnamon (ground)
1/4 tsp of allspice (ground)
1/4 tsp of salt
2 pcs of eggs (large)
1 c of pecans; halved
3/4 c of corn syrup (light)
Instructions:
Preheat the oven at 400 degrees F. Bake the crust till it turns slightly golden for about eight mins. Set it aside then reduce the oven heat to 350 degrees F.
Cook the (sweet) potato inside the microwave for six mins, on each side, at a high setting. Slice them into half and scoop out the flesh onto a bowl; mash.
Place one cup of the mashed (sweet) potato inside a mixing bowl. Add sugar, butter, vanilla, cinnamon, allspice, and salt then whisk thoroughly.
Pour onto the crust. Combine eggs and syrup then beat well. Add pecans and pour above the potato mix. Bake till brown and puffed or about forty-five mins.
Let it cool completely before serving.

Zucchini Slaw Recipe
Ingredients:
1 pc of julienned sweet pepper (red)
1 pc of onion (red); sliced thinly
1 pc of julienned celery stalk
2 tsps of salt
2 Tbsps of dill (fresh); chopped
2 Tbsps of parsley (fresh); chopped
1 pc of grated carrot (large); grated
6 pcs of zucchini (medium); grated
For the Dressing:
2 Tbsps of mustard (Dijon)
2 Tbsps of red wine vinegar
3/4 c of mayonnaise
1 Tbsp of honey (pure)
1 Tbsp of olive oil
1/4 tsp of pepper
1 tsp of horseradish
Instructions:
Combine salt and zucchini then toss them well. Transfer on a colander and leave it there for half an hour. Rinse with (cold) water then drain.
Place the zucchini inside a bowl; add sweet pepper, carrot, celery, and onion. Combine mustard, mayonnaise, oil, horseradish, pepper, honey, and vinegar; mix well then pour onto zucchini.
Toss them well. Add seasonings if desired.

Tangerine-Glazed Turkey Recipe
Ingredients:
1 pc of turkey (whole, 10 lbs); save the giblets and neck
3/4 c of softened butter (unsalted)
3/4 c of canola oil (or vegetable oil)
1-1/2 c of juice (tangerine)
2-1/4 c of stock (turkey)
3 Tbsps of flour (all purpose)
2 c of stuffing (Sausage, Apple & Dried Cranberry)
Instructions:
Preheat your oven at 425 degrees F. Rinse turkey and pat dry. Season salt & pepper on the inside. Place the stuffing inside neck and fold (neck) skin beneath its body then fasten with skewer.
Place the stuffing inside (body) cavity and tie together the legs using (butcher’s) twine. Brush half of butter on turkey then season salt & pepper then place on a (roasting) pan and roast at about twenty-five mins.
While waiting, melt butter with (tangerine) juice and oil; let it cool then reduce oven (temperature) to 325 degrees F.
Use the juice on the (roasting) pan in basting. Soak a cheesecloth into the oil-juice mix and drape turkey.
Roast turkey in an hour prior to basting with oil-juice mix and juices (above cheesecloth) every twenty mins for two and a half hours or more, till meat inside the thigh reaches (180-185 degrees F).
Remove string and cheesecloth then transfer turkey on a hot platter. Save the juice and let turkey rest for twenty-five mins before slicing then spoon out the stuffing on a (serving) dish.
Skim fat in the juice from the pan then save 1/4-cup. Add (1 cup) stock on the pan with juice. Deglaze above moderately-high heat while scraping the brown lumps.
To make gravy, whisk flour and the saved fat inside a saucepan; cook above gentle heat while whisking at about three mins. Add the (deglazed) liquid and the rest of the stock.
Simmer for ten mins while constantly stirring. Pour onto a bowl through a mesh strainer. Add (chopped) giblets and serve with the turkey.

Candied Yams with Bourbon Recipe
Ingredients:
8 pcs of sweet potatoes (large)
1/4 c of corn syrup (light)
1/4 c of corn syrup (dark)
2 Tbsps of maple syrup (pure)
1/4 c of bourbon (Kentucky, high quality)
Pepper
Salt
Parsley (fresh); chopped finely
Instructions:
Cook the potatoes and peel them. Slice and allow to cool. Arrange them inside a greased casserole dish. In a bowl, combine syrups, bourbon, pepper, and salt; pour onto the potatoes.
Place inside the oven and bake 350 degrees F till hot and bubbly. Garnish parsley on top.

Roast Garlic Mashed Potatoes Recipe
Ingredients:
1 c of olive oil
10 pcs of garlic cloves; peeled
4 pcs of potatoes (russet)
2 Tbsps of butter
1/2 c of heavy cream
2 Tbsps of cheese (Parmigiano-Reggiano); grated
1/4 c of cheese (Asiago); grated
Pepper
Salt
Instructions:
Place oil and garlic on a saucepan above very low heat; simmer till soft at about 30-40 mins. Drain the oil and save it for vinaigrettes or marinades. Puree the garlic then set it on the side.
Prick the potatoes using a clean fork; bake inside the oven (400 degrees F) for an hour till soft. Once cooked, peel then mash potatoes while hot.
Melt the butter with cream then mix in the (pureed) garlic. Add into the potatoes then add the cheeses. Stir thoroughly then season salt & pepper.
Transfer onto a (gratin) dish; bake for 12-15 mins (400 degrees F) or till bubbly and brown.
