Old Fashioned Bread Stuffing Recipe
Ingredients:
4 pcs of loaves (white bread)
Water
Insides of turkey
Broth (chicken)
2 pieces celery bunches; chopped
2 pcs of onions (large); chopped
2 Tbsps of butter (unsalted)
1/2 tsp of sage
Optional:
Mushrooms
Oysters
Instructions:
Break bread to 1-inch squares then place on 2 large bowls; let it stand overnight, allowing it to be dry. Boil the giblets with water inside a saucepan till cooked at about half hour. Keep the water; set it on the side.
Preheat the oven at (350 degrees F). Place the chopped celery along with the chopped onion in the processor; process till chopped coarsely.
Melt the butter inside a saucepan and saute processed vegetables and mushrooms till heated, don’t let it brown.
Pour sauteed mixture onto the bowl with dried bread then add sage and kept water. Add only enough water so you won’t shrink the bread.
Mix them thoroughly then taste or smell for a desired stuffing: add (chicken) broth if dry, add sage for more of the spice, and add oysters if desired.
Transfer mixture with oysters on a 13×9 inch pan; bake for forty-five mins to one hour till the crust turns brown. Stuff (small) apples inside turkey.
If there are no oysters, place mixture inside turkey cavity and bake for forty-five mins or one hour.

Apple Cranberry Pie Recipe
Ingredients:
1/2 c of sugar (white)
1/4 tsp of salt
1/4 tsp of cinnamon (ground)
2 Tbsps of flour
1 tsp of orange zest; grated
1 Tbsp of butter
1/2 c of maple syrup
3 c of apples; peeled and sliced
1-1/2 c of cranberries
Pastry for 2 pcs of 9-inch pie crust
Instructions:
Combine sugar, flour, cinnamon, salt, orange zest, syrup, and butter in a saucepan above gentle heat. Cook for two mins while stirring frequently until the sugar has dissolved.
Add the cranberries and let it boil for two mins.
Add the sliced apples and let it cool. Once cooled, pour onto the pan lined with pastry. Make criss-crossing pattern of strips of the dough above the filling and trim the edges.
Place inside the oven and bake for 40 to 45 mins at 425 degrees F.

Vegetable Casserole Recipe
Ingredients:
A can of beans (French-style, green); drained
1/2 c of sour cream
A can of soup (cream of celery)
1 c of chopped bell pepper (green)
A can of corn (shoepeg); drained
1/2 c of grated cheese (Parmesan); grated
1 c of chopped celery
For the Topping:
1/4 c of chopped almonds
1/2 c of melted butter (or margarine)
A stack of crushed crackers (Ritz)
Instructions:
Combine beans, celery, sour cream, cream of celery, corn, bell pepper, and cheese inside a buttered (casserole) dish. You can add more cheese if desired.
Combine almonds, butter, and crackers then spread evenly above the mixed vegetables. Bake inside the oven at 350 degrees F for forty-five mins.

Green Bean Casserole Recipe
Ingredients:
10-3/4 ozs of canned soup (cream of mushroom)
4 c of green beans (cooked)
1/8 tsp of pepper (black)
3/4 c of milk
1-1/3 c of onions (fried)
Instructions:
Mix milk, pepper, and soup inside a casserole pan or dish. Add (2/3 cup) onions then the beans. Bake at (350 degrees F) for twenty-five mins then top the rest of onions.
Continue to bake at about five more mins or till onions become slightly brown.

Sausage, Apple, and Dried Cranberry Stuffing Recipe
Ingredients:
3-3/4 c of bread (whole wheat and white); cubed
1 c of onion; diced
2 c of bulk sausage
2.5 tsps of sage (dried)
3/4 c of celery; chopped
1.5 tsps of rosemary (dried)
1/2 tsp of thyme (dried)
3/4 c of cranberries (dried)
3/4 c of stock (turkey)
4 Tbsps of butter; melted
1 pc of chicken liver (cooked); diced
1/3 c of parsley; chopped
1 pc of apple (Golden Delicious, medium); cored, peeled, then chopped
Instructions:
Preheat the oven at 350 degrees F. Bake inside the oven the cubed bread till golden-brown. Transfer bread onto a bowl; set on the side to cool.
Cook onions and sausage inside a skillet above medium-high heat; stir continuously, to break up lumps that will form, till cooked.
Stir in the celery, rosemary, thyme, and sage; cook at about two mins while constantly stirring.
Combine sausage mix, bread, apples, parsley, liver, and cranberries; toss them well. Sprinkle (melted) butter and stock onto mixture and toss them well.

Lemon-Garlic Steamed Broccoli Recipe
Ingredients:
24 oz of broccoli florets (fresh)
2 pcs of garlic cloves; chopped finely
3 Tbsps of lemon juice (freshly squeezed)
3 Tbsps of olive oil
Salt
Instructions:
Steam the broccoli until tender (but firm) at about 4 to 6 mins. Heat oil on a non-stick skillet above moderate heat then add garlic.
Saute for a minute and add broccoli and (lemon) juice. Add salt if preferred. Cook for a while.

Southern Greens Recipe
Ingredients:
1 lb of pork shoulder (boned, smoked); cut to 1/2 inch
3 lbs of greens (kale, collard, turnip, mustard, or mixed); removed from stems
8 c of water
Instructions:
Combine pork and water in a pot above moderate heat. Let it simmer for an hour, covered. Season with pepper and salt. Let it boil then add the greens.
Increase the heat and continue to cook until tender or about twelve mins. Transfer the pork and greens (use a slotted spoon) onto a platter. Drizzle with the liquid (about 1/4 cup).
