Cheddar Corn Casserole Recipe
Ingredients:
1/2 c of melted butter
1 pc of chopped onion (large)
1 pc of chopped bell pepper (green, small)
1 pc of chopped bell pepper (red, small)
3 pcs of eggs (fresh)
1 c of sour cream
16 oz of creamed corn (canned)
1/3 c of cornmeal (yellow)
1/4 tsp of salt
1 c of cheese (Cheddar); grated
1/4 tsp of pepper
Instructions:
Preheat the oven at (350 degrees F). Heat (2 tablespoons) butter inside a pan above moderate heat then add bell peppers & onion. Cook till softened while stirring constantly.
Take out from the heat and set aside. Combine (6 tablespoons) butter, (sour) cream, and eggs inside a bowl; beat thoroughly until it becomes smooth.
Add cornmeal, creamed corn, salt & pepper; mix thoroughly then add sauteed mixture and cheese. Transfer onto a greased baking pan (or dish). Bake for 30-35 mins until golden and puffed.
